February 2025 Slaughter Statistics
In February 2025, compared to January 2025, the number of
animals slaughtered and carcass weight increased for pigs, but decreased for cattle,
sheep and goats, and poultry.
Compared to February 2024, the number of slaughters and
carcass weight in February 2025 increased for cattle and pigs, while it decreased
for sheep and goats, as well as for poultry.

Cattle: Carcass weight represents the body weight of the slaughtered
animal, whole, after removal of the hide, blood, and internal organs,
without the head, udder, tail, kidney fat, and legs (severed at the
metacarpal and metatarsal joints).

Pigs: Carcass weight refers to the body weight of the slaughtered animal,
whole or split in half along the spine, after bleeding and removal of the
internal organs, hair, hooves, tongue, lard, and diaphragm.

Sheep and Goats: Carcass weight represents the body weight of the
slaughtered animal, after bleeding and removal of the skin and internal
organs, without the head and legs (severed at the metacarpal and
metatarsal joints). The kidneys and kidney fat are included in the
carcass.

Poultry: Carcass weight refers to the weight of the slaughtered bird after
bleeding, with feathers, down, internal organs (intestines, liver, heart,
gizzard), head, neck, and claws removed.
