INS: Animal slaughter and meat production in August 2023

In August 2023, compared to both July 2023 and August 2022, the number of animal sacrifices and carcass weight increased for cattle, pigs, and poultry, while it decreased for sheep and goats.

The term "carcass" is defined as follows:

a) For cattle, carcass weight represents the weight of the whole animal after skin, blood, and internal organs are removed, excluding the head, udder, tail, renal fat, and feet (separated at the metacarpal and metatarsal joints).

b) For pigs, carcass weight represents the weight of the whole or equally divided along the spine after bleeding, excluding internal organs, hair, hooves, tongue, bones, and diaphragm.

c) For sheep and goats, carcass weight represents the weight of the animal after bleeding and skin removal, excluding internal organs, head, and feet (separated at the metacarpal and metatarsal joints). Kidneys and renal fat are included in the carcass.

d) For poultry, carcass weight represents the weight of the slaughtered bird after bleeding, excluding feathers, down, internal organs (intestines, liver, heart, gizzard), head, neck, and claws.

The average carcass weight is the ratio of carcass weight to the number of animals or birds slaughtered.
