Artisanal cheeses, natural yogurts, and kefir are the most sought-after products, especially preferred by younger consumers, who associate these products with a healthy and responsible lifestyle.
In addition, studies show that 39% of urban consumers are willing to pay 20–30% more for artisanal dairy compared to industrial products. The European Union supports the development of this segment through quality schemes and programs promoting traditional products.
For small and medium-sized processors in Romania, focusing on artisanal dairy can represent a major opportunity for differentiation and consolidation in the urban market, where demand for premium products continues to grow.
