Slaughter Statistics and Carcass Weight in January 2025

In January 2025, compared to December 2024, the number of slaughters and carcass weight increased for poultry and decreased for all other animal species.

Compared to January 2024, the number of slaughters and carcass weight increased for pigs and poultry, while they decreased for cattle, sheep, and goats.

Definition of "Carcass"

a) Cattle: Carcass weight represents the weight of the slaughtered animal’s body, whole, after skin, blood, and internal organs are removed, without the head, udder, tail, kidney fat, and legs (separated at the metacarpal and metatarsal joints).

b) Pigs: Carcass weight represents the weight of the slaughtered animal’s body, whole or split into equal halves along the spine, after bleeding, with internal organs, hair, hooves, tongue, suet, and diaphragm removed.

c) Sheep and Goats: Carcass weight represents the weight of the slaughtered animal’s body, after bleeding and skin removal, without internal organs, head, and legs (separated at the metacarpal and metatarsal joints). Kidneys and kidney fat are included in the carcass.

d) Poultry: Carcass weight represents the weight of the slaughtered bird after bleeding, without feathers, fluff, internal organs (intestines, liver, heart, gizzard), head, neck, and claws.
